Trader Joe's Pumpkin Bread Recipe with a Twist

Happy Fall Y'all!


It's finally cooling off here in the Bay Area and I'm so excited to break out my jeans, boots and sweaters. With the fall weather upon us, I'm also seeing lots of pumpkins, halloween decorations, and scented candles everywhere I go.


I ran into Trader Joe's for a few things this week and also found their pumpkin bread mix on full display....a family favorite here in my house!


Not going to lie it kind of made my day.


We love this mix, but I like to shake it up a bit and add in a few healthy twists...a boost of protein with the chia/flax seeds and whole milk vanilla yogurt, and of course I have to get in an extra vegetable serving by adding the zucchini.


These make for a great after school (or post workout) snack....and even a quick breakfast on the go!


1 box of Trader Joe's pumpkin bread mix Substitute 1 small container of whole milk vanilla yogurt for the oil 2 eggs 1 tablespoon chia seeds 1 tablespoon flax seed meal 1 small zucchini shredded (squeeze out the excess water) 1 cup of water Fold all the ingredient together with a spatula and follow baking instructions on back of the box depending on if you go with the muffins or bread.
