Gluten Free Turkey Hummus & Pesto Wrap

This is my latest homemade lunch obsession and it's SO good!


I LOVE this gluten free turkey hummus pesto wrap for a quick work from home lunch in between calls, or a light dinner when I don't want to eat too heavy. This hits all the marks on nutrition: low on the glycemic index with anti inflammatory properties, good fats, high in protein, and vegetable heavy.


Use the Siete brand of gluten free tortillas as a base, and go from there with add on's. I try to get creative and use up whatever veggies I have in my fridge. And on a chilly day I warm the tortilla in a pan and melt mozzarella cheese over it.



Add a slice of deli turkey on top and cook until the cheese is melted and the turkey is warm. Or hold the turkey and go veggie if you are so inclined.

Remove it from the pan and then load it up with as many veggies as you can. In no particular order I like to add arugula, avocado, cucumbers and red peppers to give it some crunch, and halved baby tomatoes.



I also love adding the lemon or jalepeno hummus from Whole Foods (I usually have both on hand) and this vegan kale cashew and basil pesto from Trader Joes. At only $3.99 that's a bargain you can't beat!
